I have never had any slow responses with any of my consoles hooked up to my HDTV (I have all three mentioned hooked up to a Philips LCD).
A game console can connect to a plasma or LCD, just as long at the input connections are available (Component, HDMI, RGB) on the TV.
Using a Sony TV wouldn't make a difference. Regardless of the brand, a gaming console will work with any TV. Again, just as long as the input connections on the TV are available. Most new HDTV's come with all the input connections you will need to connect a game console. Enough to even connect computers/laptops to them.
